So I'm stuck choosing between two games that I'm interested in. If you had to choose, which game would (or wouldn't) you choose and why?

I personally loved Fable 2. I have played Soul Calibur IV at my friend's house and I felt it was alright but nothing special.

Go for Fable 2, it has a lot more content and is much more wirth your time. Soul Caliber gets old really fast. I bought it and realized i should have just rented it

fable 2 was a pretty cool game...to me, it was a letdown in terms of multiplayer and the ending, but it has plenty of DLC and in-game content to keep you busy.

Fable II. To me, it never gets old.
Soul Caliber gets boring after about 2 hours.

The only thing I've heard that's bad about Fable 2 is that it can get glitchey at times. Is that true?

I'll say buy Fable 2, it has more lasting appeal than Soul Calibur IV.

And there is new downloadable content coming soon for Fable 2.

Soul Calibur IV is an excellent fighter though.
